We normally stick to chocolate desserts (like <span style=\"text-decoration: underline;\"><a href=\"https:\/\/www.dessertfortwo.com\/big-salty-chocolate-chip-cookies-with-caramel\/\">caramel chocolate chip cookies<\/a><\/span>) in February, so these heart thumbprints really deserve centerstage today.<\/p>\n\n\n\n<p>The base is a soft, tender shortbread cookie that only contains a few basic ingredients. The only catch with this recipe is that you cannot skip the chill time. One stick of unsalted butter that has been softened at room temperature for about an hour. The best way to soften butter is to slice it up and let it rest at room temperature. It&rsquo;s ready when its soft enough to make a fingerprint in it, but not overly soft so that your finger presses all the way through easily. We&rsquo;re using unsalted butter and then adding 1\/4 teaspoon of salt to the flour.<\/li>\n\n\n\n<li><strong>Granulated Sugar<\/strong>. Just 1\/4 cup of granulated sugar for this dough, because the recipe makes just 20 cookies. Also keep in mind that the jelly brings quite a bit of sweetness to each cookie.<\/li>\n\n\n\n<li><strong>Egg<\/strong>. We need one large egg for these strawberry jam cookies.<\/li>\n\n\n\n<li><strong>Vanilla Extract<\/strong>. We always bake with real pure vanilla extract.<\/li>\n\n\n\n<li><strong>Almond Extract<\/strong>. This is entirely optional, but almond extract brings an interesting note to this dough. It reminds me of the flavor of wedding cake.<\/li>\n\n\n\n<li><strong>All-Purpose Flour<\/strong>. Do not use anything but regular all-purpose flour for this recipe.<\/li>\n\n\n\n<li><strong>Strawberry Jelly<\/strong>. It&rsquo;s best to use jelly instead of jam because jam has chunks of strawberries in it. A smoother jelly is better for making very distinct heart shapes. The butter will change color from yellow to a much paler yellow after about 1-2 minutes.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p>After a few minutes, stream in the sugar while beating. Be careful not over-beat the dough. mv-create-instructions-slot-v2\">\n\t\t<h3 class=\"mv-create-instructions-title mv-create-title-secondary\">Instructions<\/h3>\n\t\t<ol><li id=\"mv_create_889_1\">Line a large baking sheet with a silicone mat (this helps the shortbread cookies not spread while baking), and make room in your fridge for a cookie sheet.<\/li><li id=\"mv_create_889_2\">In a large bowl, add the softened butter and beat with an electric mixer on HIGH until light and fluffy. The butter will change color from yellow to a much paler yellow.<\/li><li id=\"mv_create_889_3\">Next, stream in the sugar while beating.<\/li><li id=\"mv_create_889_4\">Then, beat in the egg, vanilla extract and almond extract very well. <\/li><li id=\"mv_create_889_5\">Finally, evenly sprinkle the flour and salt on the dough. Mix the dough with the electric mixer just until it comes together. It might be a bit crumbly, but the heat of your hands will bring it together.<br>Scoop out 2 teaspoons of dough, and use your hands to roll it into a ball, and place it on a baking sheet. <\/li><li id=\"mv_create_889_6\">When all of the cookies are roll out, dip your pinky in flour, and lay it sideways on each dough ball to make half of a heart. Repeat with more flour to make the other half of the heart. See photos for reference. <\/li><li id=\"mv_create_889_7\">Use a 1\/4 teaspoon measure to place jelly on each side of the heart, for a total of 1\/2 teaspoon of jelly per heart. <\/li><li id=\"mv_create_889_8\">Place the cookies in the fridge for one hour to chill before baking. Do not skip this step!<\/li><li id=\"mv_create_889_9\">Preheat the oven to 350. Bake the cookies for 12 minutes. Check on the cookies, and remove them from the oven when the edges of the bottom of the cookies is just starting to turn golden brown. Let the cookies cool on the baking pan completely. Once cool, remove the cookies from the pan. Shortbread cookies are delicate when warm, so this is why I recommend cooling them on the pan.<\/li><\/ol>\t<\/div>\n\t<div class=\"mv-create-notes mv-create-notes-slot-v2\">\n\t\t<h3 class=\"mv-create-notes-title mv-create-title-secondary\">Notes<\/h3>\n\t\t<div class=\"mv-create-notes-content\">\n\t\t\t<p><p><strong>Butter<\/strong>: The best way to soften butter is to slice it up and let it rest at room temperature. It&#x27;s ready when its soft enough to make a fingerprint in it, but not overly soft so that your finger presses all the way through easily.<br \/><strong>Strawberry Jelly<\/strong>: Use a smooth, runny strawberry jelly for this recipe.
